There can be not only coffe tiramisu

Tomorrow I will go for lunch to some friends house and I experimented a different version of the tiramisu, the berries tiramisu. This time I listen Esqueletos by Tarantella. No, it is not a folk group. I knew about them by change, I was actually looking for a folk tarantella and I ended up liking them a lot. The singer, who is also the songwriter, is called Kal Cahoone. She is from Colorado but actually grew up in Argentina, Chile, and California and I think this influenced a lot her music that results in a combination of diverse styles. Here the video

Going back to the recipe. A week ago I made berries marmalade. I went to the local market and I bought sloe berries, red currant, and pomegranate.

500 g of berries

8 spoons of brown sugar

The juice of 3 oranges

Place the pan on the burner and cook on high heat until boiling. Then cook at medium low temperature for 45 minutes. Do not forget to stir it every once in a while.

Once is ready, blend the berries until the marmalade looks smooth and creamy.

While the marmalade is still hot pour it into glass containers. To avoid molds contamination it would be good to previously boil the containers in water for at least 10 minutes.

For the tiramisu, I prepared a mascarpone cream without using raw eggs. It is very simple and fast to make.

150 g of mascarpone

50 g of icing sugar

80 g of yogurt

Mix the mascarpone and the icing sugar and, once is creamy, add the yogurt.

For the syrup used to soak the sponge fingers, I used:

100 g water

50 g icing sugar

80 g of berry juice

I let it boil on the burner and let it cool down.

Let’s start assembling ;). I used small serving containers but every size, shape, and color are welcome, as long as the food is good. First place mascarpone cream on the bottom, one layer of sponge fingers soaked in the syrup (do not let it too long in the syrup, they may become too fluffy), one of marmalade, one of sponge fingers, one of mascarpone and so on.

The sour taste of the marmalade contrast very well with the sweetness of the mascarpone cream and it is a very nice experience.
